Classic Prawns Biryani
Ingredients

- basmati rice2 cups

- biryani masala2 tbsp
- turmeric powder1 tsp
- red chili powder1 tsp
- ghee2 tbsp

- ginger1 inch
- cumin seeds1 tsp
- garam masala1 tsp

- fresh coriander leavesto garnish
- fresh mint leavesto garnish
Instructions

Wash and soak the basmati rice in water for 30 minutes.

In a large pot, bring water to a boil, add a pinch of salt, and cook the rice until it is 70% done. Drain and set aside.

Heat 2 tbsp of ghee in a large pan. Add cumin seeds and let them splutter.

Add finely sliced onion and sauté until golden brown.

Add minced garlic and ginger, and sauté for another minute.

Add chopped tomatoes and cook until they become soft and mushy.

Add biryani masala, turmeric powder, red chili powder, and salt. Mix well.

Add the prawns and cook until they turn pink and are cooked through.

Add yogurt and mix well. Cook for another 2-3 minutes.

In a large pot, layer half of the cooked rice, then add the prawn mixture, and top with the remaining rice.
