Preheat your oven to 200°C (400°F).
Rinse the brown rice under cold water. In a medium saucepan, combine 1 cup uncooked brown rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and water is absorbed.
While the rice is cooking, line a baking tray with parchment paper or lightly grease it with a bit of olive oil.
Place the 600g salmon fillet on the prepared tray, skin side down. Drizzle 1 tablespoon olive oil over the salmon.
Zest the lemon and sprinkle the zest over the salmon. Then, slice the lemon and lay the slices on top of the fillet.
Sprinkle 2 tablespoons fresh dill, 1 teaspoon salt, and
5 teaspoon black pepper evenly over the salmon.
Bake the salmon in the preheated oven for 15-18 minutes, or until the salmon flakes easily with a fork.
Once the rice and salmon are cooked, serve the baked salmon over a bed of brown rice. Garnish with additional fresh dill and a squeeze of lemon juice if desired.
