1Place the dried chickpeas in a large bowl and cover with water. Soak overnight or for at least 12 hours.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Drain and rinse the soaked chickpeas. Pat them dry with a clean towel.
In a food processor, combine the chickpeas, chopped onion, minced garlic, fresh parsley, fresh cilantro, ground cumin, ground coriander, and salt. Pulse until the mixture is well combined but still slightly coarse.
Add the baking powder and flour to the mixture and pulse a few more times until everything is well incorporated.
Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.
Place the falafel balls or patties on the prepared baking sheet and brush the tops with olive oil.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the falafel are golden brown and crispy on the outside.
Remove from the oven and let cool slightly before serving. Enjoy your baked falafel with your favorite dipping sauce or in a pita with fresh vegetables.
