1Preheat your oven to 180°C (350°F).
Peel and slice the potatoes into thin rounds.
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
Add the ground pork to the skillet and cook until browned.
Stir in the thyme, and season with salt and pepper to taste.
In a baking dish, layer half of the sliced potatoes.
Spread the cooked pork mixture over the potatoes.
Layer the remaining potatoes on top of the pork.
Pour the low-fat milk evenly over the casserole.
Cover the dish with foil and bake in the preheated oven for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
