1Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and cook until fragrant, about 1 minute.
Add the mixed vegetables to the pan and cook for 2-3 minutes until they are tender.
Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
Add the cooked rice, cooked chicken, soy sauce, kecap manis, and chili paste to the pan. Stir everything together until well combined and heated through.
Season with salt to taste.
Garnish with chopped green onions before serving.
