Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat 2 tbsp of ghee in a large pot over medium heat. Add the cinnamon stick, cloves, green cardamoms, and bay leaves. Sauté for a minute until fragrant.

Add the finely sliced large onion and sauté until golden brown.

Add the minced garlic and grated ginger. Sauté for another minute.

Add the chicken breast pieces and cook until they are no longer pink.

Stir in the biryani masala, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
