Cut the chicken thighs into bite-sized pieces.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of vegetable oil.
Add the sliced red bell pepper, green bell pepper, and onion to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Add the minced garlic to the skillet and stir-fry for another 1 minute.
Return the cooked chicken to the skillet.
Add the soy sauce, hot sauce, red chili flakes, black pepper, and salt to taste. Stir well to combine all the ingredients.
Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Garnish with chopped spring onions before serving.
Serve hot and enjoy your Hot and Spicy Chicken Stir Fry!
