1Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.
Season the chicken breasts with salt and black pepper to taste.
Dredge the chicken breasts in the all-purpose flour, shaking off any excess.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the lemon juice, chicken broth, and capers. Bring the mixture to a boil, scraping up any browned bits from the bottom of the skillet.
Return the chicken breasts to the skillet and simmer for about 5 minutes, or until the sauce has thickened slightly.
Sprinkle the chopped parsley over the chicken and serve immediately.
