Rinse the long-grain rice under cold water until the water runs clear. Drain and set aside.
In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the pot and set aside.
In the same pot, add the remaining tablespoon of vegetable oil. Add the chopped onion and red bell pepper, and sauté until the onion is translucent.
Stir in the tomato paste, thyme, curry powder, and cayenne pepper. Cook for about 2 minutes until the spices are fragrant.
Add the rinsed rice to the pot and stir to coat the rice with the tomato and spice mixture.
Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Once the rice is cooked, add the cooked chicken back to the pot. Stir to combine and heat through.
Season with salt to taste. Serve hot and enjoy your Jollof Chicken Fried Rice.
