Stir in the curry powder, ground cumin, and ground coriander, and cook for another minute until fragrant.
Add the diced tomatoes, coconut milk, vegetable broth, and rinsed lentils to the pot.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the lentils are tender.
Season with salt to taste.
Garnish with fresh cilantro before serving.
